I’m on a blondie kick! We went hiking yesterday with some good friends just north of Bear Mountain and I wanted to bring a snack for the boys. Of course, I decided to bake something at 10:30 on Saturday night, so it had to be easy. I did an internet search for “bar cookies” and came up with these. Actually it was a toss-up between these butterscotch blondies and a recipe for white chocolate blondies. Next time I’ll try the white chocolate blondies because they looked really good too.
Our hike was excellent – it was a picture-perfect day — sunny with a nice breeze. It was our boys’ first hike and we hiked for about an hour with parts that were quite steep for them. We then sat down on a huge rock to have lunch. The boys welcomed the butterscotch blondies and would have been quite pleased if I had allowed them to have seconds.
My next goal is to try to make butterscotch blondies without the use of butterscotch chips. I had a delicious butterscotch bar from the Treats Truck, and I’d love to reproduce it, but haven’t had much luck yet. I’ll keep trying.

1 1/4 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup firmly packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 cup butterscotch flavored chips
Preheat oven to 350 degrees F. Grease a 9-inch square baking pan.
Sift together flour, baking soda and salt. Set aside.
In a bowl, with an electric mixer at medium speed, beeeeat butter with sugar and brown sugar until fluffy. Add egg and vanilla and beat well. Gradually add dry ingredients, beating on low speed until thoroughly combined.
Spread batter in prepared baking pan. Sprinkle butterscotch chips evenly over top. Bake 5 minutes or just until butterscotch is shiny and soft. With knife, swirl pieces into batter to create a marbled effect. Return to oven and bake 15-20 minutes longer or until set. Cool on wire rack; cut into bars.
Yield: 16 squares
