Pomegranate and Mint Sorbet

If you enjoy the taste of fresh mint, this sorbet is for you.   It’s heavier on the mint flavor than it is on the fruit flavor, but it’s incredibly refreshing.    This is now one of my favorite sorbets.    My husband didn’t love it, but he’s not a huge fresh mint fan.    Although this is a perfect summer dessert, I could eat it every day of the year.    I’ll definitely make this again before the summer is out because our garden is overflowing with fresh mint.

I was worried that this sorbet might freeze into a solid block without the addition of a teaspoon or two of vodka, but it didn’t.  I was a pleasant surprise.
