These crackers taste just like Cheez-Its, but they’re healthier because they don’t have any junky stabilizers/preservatives in them. My boys inhaled the whole batch last night – including the one that swears he doesn’t like cheese. These are a great snack – full of flavor and easy to make. You toss everything in the food processor for a couple of minutes, then roll out the dough and cut it into rectangles. If you want to get fancy, you can use a cookie cutter to make them look like goldfish. These make a great after-school or afternoon snack!
6 ounces (~1 1/2 cups coarsely grated) orange sharp cheddar cheese
4 tablespoons butter
1/2 cup whole wheat flour
1/4 cup all-purpose flour
1/8 teaspoon onion powder
1/8 to 1/4 teaspoon table salt
Preheat oven to 350°F. Combine all ingredients in a food processor, running the machine until the dough forms a ball, about two minutes.
If the dough feels warm, wrap it in waxed paper or plastic wrap and refrigerate for 30 to 45 minutes. This will make it easier to transfer the dough once it is rolled out.
On a lightly floured surface, using a lightly floured rolling pin, roll the dough out 1/8-inch thick. Cut the dough into squares using a sharp knife. Gently transfer crackers to an ungreased cookie sheet with a 1/2 inch between them. Using the point of a steak knife, put a hole in the center of each cracker. Bake the crackers on the middle rack for 12 to 15 minutes, or until they are barely browned at the edges. Remove from the oven and set the cookie sheet on a rack to cool.
