Oatmeal Cookies with Tart Cherries and White Chocolate

I love a good oatmeal cookie. I also really like tart cherries and white chocolate chips. The sweet/tart combination is delicious.

Oatmeal Cookies with Tart Cherries and White Chocolate

1/2 pound (2 sticks) unsalted butter, softened
1 cup firmly packed dark brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
3 cups old fashioned oats
1 cup dried cherries
1 cup white chocolate chips or chunks

Heat oven to 350°F.

In large bowl, cream butter and sugars. Add eggs and vanilla; beat well.

Combine the flour, baking soda, cinnamon and salt.   Add the dry ingredients to the wet ingredients; mix well.  Add oats, cherries and white chocolate chips; stir to combine.

Drop dough by rounded tablespoonfuls onto ungreased cookie sheets.

Bake 10 to 12 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

Yield:  4 dozen cookies
