Sweet Potato Bread



Because Balducci’s went out of business, and I can’t pass up a great sale,  I now have a number of cans of sweet potato puree.   I made these muffins the other day which were really delicious, but making them was a little time consuming because you have to brush them with melted butter and then roll them in a sugar/spice mixture.    I wanted to find a recipe whose ingredients I could throw in the KitchenAid mixer and then pour right into the pan.   This was it.  I made it on Friday night because I wanted to have something for the boys to eat when they got up on Saturday morning.   We had a really busy day.   We started the day with a walkathon to raise money for the boys’ school, immediately followed by a little league photo shoot, followed by a game.  As soon as the baseball game was over we hopped into the car and drove to Garden City to celebrate my nephew’s First Communion.   It was a hectic, but great day.

Try this bread for something different in the morning.   It’s very tasty!  I’ll definitely make it again and next time I’ll try it with cream cheese for breakfast.  Yum!

Sweet Potato Bread

1 cup sugar
1/3 cups water
1/3 cup oil
2 eggs
1 cup mashed sweet potatoes
1 1/2 cups, plus 3 tablespoons all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon baking powder

Preheat oven to 350 degrees F.

Combine sugar, water, oil, eggs, and sweet potatoes and mix thoroughly. Add dry ingredients and mix to combine.  Pour into a greased loaf pan and bake for ~45 minutes or until a toothpick comes out clean. Cool in pan to room temperature.

Yield:  1 loaf

    I just stumbled across your wonderful recipes and am keen to try the sweet potato bread but just had one small question – does it matter what type of oil you use? would olive oil do or do I need something a little lighter like sunflower oil?

  • Hi Alison,

    I have always used either canola oil or vegetable oil when I make this bread. I know that a lot of people bake with olive oil, but I’ve never tried it myself. It might be delicious. That said, the bread is really good with a lighter oil.

    Good luck and if you try to make it with olive oil, please let me know how it turns out.

    Hi Diane,

    I just thought I’d let you know how I got on with making your sweet potato bread. I finally got round to making it yesterday. Living in the UK I had to make a few of adjustments:
    I wasn’t sure what size cup you used so I used a smallish teacup
    I used fresh cooked mashed sweet potato as we don’t seem to have tins of it over here
    Olive oil as it was the only oil I had in the kitchen;
    Self Raising flour – I’m not sure if that’s the same as all purpose flour (again we don’t have anything by that name over here, it’s either self raising or plain)
    but it turned out absolutely PERFECT. It had barely cooled down when we started devouring it. My family loved it, spread with butter and there’s not much left now apart from a few crumbs!

    Thank you for such a great recipe – this one I will definitely use again and again.

    Made this last night. I was just going to bake my sweet potatoes and enjoy them with butter, but for some reason I ended up on this website again. So far I have only tried the chewy chocolate cookies (best chocolate cookies I’ve ever had), and this bread, but I’d be willing to say this is my go-to place for recipes right now so thank you for this blog. I was thinking of starting one for newlyweds since it is just my husband and I and I’m always seeing recipes that feed full families, but most of my time will probably go to following your blog now. lol.

    Anyway, The bread took a few bites to convince me, maybe because I had no idea what sweet potato bread was supposed to taste like, but by today it is a new favorite in my house. My husband has been sneaking pieces all night. 😀 It is super moist, and it was very easy to make. Having just moved to Tennessee, I feel like more of a native now that I can do something cool with sweet potatoes. Thanks again!
