In reply to Theresa. Hi Theresa - I am not sure why your casserole was dry. I let my eggplant sit with salt on it for 30 minutes before cooking it. Perhaps your oven was too hot? Also, what type of mozzarella did you use?

I don’t know what I did wrong. I did sweat the eggplant even though it’s not specified. The casserole came out dry/stodgy. Any suggestions? Is it supposed to be moist & creamy as you mentioned?

In reply to Mary. Hi Mary - I did not use fresh mozzarella in this recipe, although you certainly can. I used a block of mozzarella that I diced. I used the kind that is shredded on pizza.

This looks absolutely delicious and I’m going to make it tomorrow night. I can’t eat orzo on a low-carb diet, but I’m going to use finely chopped (in a processor) shiratake tofu noodles and use that instead. They should be an acceptable substitute for me in this. I really look forward to trying this!

This dish was FABULOUS. The Orzo went so well together with the mozzarella cheese. It was delicious and creamy! Defenitly something to look forward to eating. Thank you for sharing this wonderful recipe with us!
