Hi Theresa – I am not sure why your casserole was dry. I let my eggplant sit with salt on it for 30 minutes before cooking it. Perhaps your oven was too hot? Also, what type of mozzarella did you use?

Hi Mary – I did not use fresh mozzarella in this recipe, although you certainly can. I used a block of mozzarella that I diced. I used the kind that is shredded on pizza.

I can’t eat orzo on a low-carb diet, but I’m going to use finely chopped (in a processor) shiratake tofu noodles and use that instead. They should be an acceptable substitute for me in this. I really look forward to trying this!
