Hi Richard – I’m pretty sure having the filling in the center will work just fine. As a matter of fact, that happened to several of mine – the filling was completely covered when they finished baking. Best of luck with your coffee shop. I’m sure your patrons will like these. Just about everyone does (with the exception of a couple of my picky boys who don’t like cheese!)

I didnt have mini chocolate chips so I chopped a bar of ghiradelli semisweet chocolate tiny. the liners for the first batch were kinda wet.. hoping that is alright. They taste great! I am thinking these will be a great hit!

Yes please! I’ve made miniature versions similar to your cupcakes using brownie mix and a mini muffin pan. They were a total hit around the office and I agree that left-over cream cheese mixture is SO good raw! I’m sure consuming small amounts of raw eggs is ok especially if it’s got sugar in it! 🙂
