But the problem is that I almost never have enough left over risotto to bother making cakes – so thanks Ina for coming up with this one – and thanks Diane for doing all the leg work!! All i had to do was cook them up! One comment on sautéing them – you definietly want to make sure the mixture is refrigerated for at least 2 hours and overnight is probably better. The cakes were a little sticky to work with and we probably only had them refrigerated for an hour and a half. And now that I think about it, I probably should have put the risotto cakes back in the refrigerator while I was sautéing the others. But they were scrupt-dilly-icious just the same!
