I hope you try the recipe. It’s delicious and everyone that has tried it has raved about it. You can definitely use the Costco chicken breasts (I love them and buy them all the time). Poaching them sounds like a great idea. If you purchased the frozen chicken breasts, you can follow the directions on the package and throw them into the oven frozen and they’ll cook perfectly. (I didn’t believe this myself until I tried it.)

I purchased a pkg. of boneless,skinless chicken breasts at Costco( 6pkg….good quantity of chicken). The serving size indicates 4 oz.Can I use the chicken in your chicken stew recipe? Should I poach them in a small amount of water & retain the water for use in this recipe?

I am such a fan………………I am inspired with all these wonderful new recipes!!
