In reply to Gibby. When I make the cookies, they do the same thing. The cookies end up being fairly flat, but delicious. They're not cakey at all.

In reply to Theresa. Hi Theresa - I am not sure why your casserole was dry. I let my eggplant sit with salt on it for 30 minutes before cooking it. Perhaps your oven was too hot? Also, what type of mozzarella did you use?

Baker’s Joy makes a non-stick spray with flour that is wonderful and would work on your pan just spray well and bake. Swear by this stuff!

I don’t know what I did wrong. I did sweat the eggplant even though it’s not specified. The casserole came out dry/stodgy. Any suggestions? Is it supposed to be moist & creamy as you mentioned?

These were delicious. Be careful not to overcook. I did and the Blondies around the edge were too hard to eat.
