I used an entire can of coconut milk because I didn’t want leftover coconut milk and subtracted one cup of broth (because of the extra coconut milk); it still turned out fabulous. I didn’t have enough carrots to make one cup chopped so I used a red pepper to fill it out…it added beautiful color.

It wasn’t as hard as I thought it was to make. So yummy!!!!
