A friend recently brought Jason and me some gorgeous fish which he caught in Mexico — I can’t wait to use your recipe. I also love my grill pan — two “secrets” I was told were (1) never oil the grill pan — only oil the fish, meat or chicken you will be grilling on it; and (2) immediately after you’re finished grilling, pour a layer of plain table salt on the pan. Let the pan cool and then simply wipe it with a paper towel and it’s clean (this really works!).
