Finally got a muffin pan! I made these a couple of days ago, and they are bringing my husband and I joy with every bite! They are so delicious, and I love that the flavors are simple. The dough was very light and fluffy, and the muffins came out very moist! I used unbleached wheat flour, which I think may have something to do with balancing the tartness. I didn’t find them to be too lemony at all, in fact I would have liked a little more punch. I made standard size muffins and we are loving them with some Trader Joe’s vanilla ice cream on top! Great recipe. I’m going to try the Honey Cornbread muffins next.

This recipe is true to form – very adorable little muffins that went great with the cream cheese frosting we had left over from carrot cake before.

I always like my lemon/lime desserts, especially tarts and muffins, to be slightly more tangy than what the recipes say…..just so they make me suck in my cheeks, screw up my nose and squeeze one eye close when the tanginess hits my mouth!!!
