I made this twice and the 3rd loaf is proofing. It came out just like the picture. Flavor and texture is right up there with the best Italian breads I’ve tried. Second time I used a smaller pot to bake it in. It came out looking more like a boule than the first. Both were very good.

A great tip is to put the resting dough on parchment paper and that way you can just lower the dough into the hot pot and not have to touch it.
