Orange and Cream Cookies

If you like creamsicles, I think you’ll love these cookies. Orange and white chocolate are a great combination, especially in a cookie. I brought these cookies to a meeting recently and I bumped into one of my sons’ friends on the way home. I happened to have a few cookies leftover, so I gave him a couple. This 9-year old called the next day and told me that these cookies were the best he had ever eaten. Let me tell you, he made my day. He really did. In life it’s the little things and in this case the little comments that make all the difference.

These cookies are currently one of my favorites. They’re definitely worth trying.

Orange and Cream Cookies
Recipe from Cooking Classy

3 1/4 cups all-purpose flour
2 teaspoons cornstarch
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
1 cup granulated sugar
1 cup packed light-brown sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon orange extract
1 Tablespoon orange zest
2 cups white chocolate chips

Preheat oven to 350 degrees. In a mixing bowl, whisk together flour, cornstarch, baking powder, baking soda and salt, set aside. In the bowl of an electric mixer, mix butter, granulated sugar and brown sugar until light and fluffy, about 3-4 minutes. Mix in eggs one at a time mixing after each addition. Mix in vanilla extract, orange extract and orange zest. Slowly add in dry mixture and mix until well incorporated. Gently stir in the white chips. Use a cookie scoop or two tablespoons to drop dough onto a greased or silpat-lined cookie sheet and bake 9-11 minutes. Allow to cool on cookie sheet several minutes before transferring to a wire rack to cool completely.

Yield: 4 dozen cookies
