For this recipe, I use 1 cup of pumpkin puree. If you can’t find a can of pumpkin puree in your stores, you can cook a pumpkin, puree it and use 1 cup of that in the recipe. Hope this helps. You can also substitute sweet potato puree. It will give a slightly different taste, but the muffins will still be delicious.
