Fleur de sel is basically fancy sea salt. It’s salt that is harvested by hand. It’s scraped by hand from the surface of the salt before it sinks to the bottom of the salt pans. It’s typically used as a finishing salt. If you don’t have any and you want to try these muffins, I’d substitute kosher salt.
