I didn’t intend to peel the sweet potatoes, but when I cut the ends off, I saw that there were some really dark spots on them that looked like bruises, so I took that part of the skin off. In the photo, the potatoes are partially peeled. I didn’t touch the skin that wasn’t bruised.

I know what a sultana is and I love them. Used them in baking when I was growing up.

So, do you ever peel tho sweet potatoes? Picture looks like you did somewhere along the line but the recipe does not mention it. It does sound delicious!
