I made this tonight, and it was delish. Of couse, my kids were not going to go anywhere near a scallop, so I made their dinner first, and then made this for my hubby and me. Got some scallops at the farmer’s market this morning, and they were “dry”, and fresh off the boat earlier today. Because I was simultaneously getting the kids ready for bed, and making dinner, I forgot to add the parsley which was sitting right there on the counter. I hate when that happens!! Still, it was great. Thanks!

The “dry” scallops are the way to go and this recipe was absolutely delicious as were the sweet potato fries. Dry scallops are hard to find but worth the search.

We took home leftovers that night and they were wonderful the next day, too!
