They are one of my fave cookies, ever! And yes, with coconut oil-based cookies especially (even more so than butter), chilling the dough is absolutely necessary. Sometimes I chill it for days 🙂 And then grab a few mounds as needed to be baked. So glad you’re hooked on these now too!
