One small snafu: I forgot to defrost the phyllo dough, so some of the sheets tore but they still made a tasty flaky topping.

Lauren,

I think you can make it earlier in the day as long as the top is completely covered in butter so the phyllo doesn’t dry out as it waits to cook.
