My two-year-old gobbled up three of them, even though he had eaten a full breakfast an hour before. I’m a huge fan of Cooking Light but missed this recipe. There will be many sweet corn mini-muffins in our future.

These turned out to be a perfect side dish for a bowl of winter chili. I brought the leftovers to a friend who has a five-year-old and a one-year-old. They both ate the muffins with glee.
