Set up a potini bar with a casseroles of mashed yukon gold, purple and sweet potatoes. Set up martini glasses and scooped whichever potato the guest wanted with an ice cream scoop. They then chose from a variety of toppings: bacon bits, shredded cheddar, sour cream, chives, maple syrup. It was great fun to see the combinations everyone came up with.
