Sweet Potato Bread

Because Balducci’s went out of business, and I can’t pass up a great sale,  I now have a number of cans of sweet potato puree.   I made these muffins the other day which were really delicious, but making them was a little time consuming because you have to brush them with melted butter and then roll them in a sugar/spice mixture.    I wanted to find a recipe whose ingredients I could throw in the KitchenAid mixer and then pour right into the pan.   This was it.  I made it on Friday night because I wanted to have something for the boys to eat when they got up on Saturday morning.   We had a really busy day.   We started the day with a walkathon to raise money for the boys’ school, immediately followed by a little league photo shoot, followed by a game.  As soon as the baseball game was over we hopped into the car and drove to Garden City to celebrate my nephew’s First Communion.   It was a hectic, but great day.

Try this bread for something different in the morning.   It’s very tasty!  I’ll definitely make it again and next time I’ll try it with cream cheese for breakfast.  Yum!

Sweet Potato Bread

1 cup sugar
1/3 cups water
1/3 cup oil
2 eggs
1 cup mashed sweet potatoes
1 1/2 cups, plus 3 tablespoons all-purpose flour
1 teaspoon baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon baking powder

Preheat oven to 350 degrees F.

Combine sugar, water, oil, eggs, and sweet potatoes and mix thoroughly. Add dry ingredients and mix to combine.  Pour into a greased loaf pan and bake for ~45 minutes or until a toothpick comes out clean. Cool in pan to room temperature.

Yield:  1 loaf
