One of my guests is a vegetarian of sorts, so I decided to leave out the bacon and substitute carmelized onions instead. It was absolutely delicious! Oh, since I didn’t have a proper quiche dish, and the puff pastry sheets are rectangular anyway, I simply used my smallest pyrex baking dish which would be ~9×13 I guess. I only had to whack the puff pastry a couple times with the rolling pin and I was good to go!
