I was expecting a Chinese style scallion pancake, but with seafood in it. I started mixing everything together, then realized that the scallops hadn’t finished defrosting. I popped them in the micro, where they began to smell rather fishy. After draining and chopping, I hopefully incorporated them into the batter along with scallions and cilantro, then poured oil into the skillet. How much is too much, I pondered. I wiped some oil out then poured the batter in. While it cooked, I mixed up a Chinese style dipping sauce, then called the kids to come eat. Ta-da! There on the serving platter lay a stinky green disk with the texture of a Bisquick pancake – a zombie alien green and yellow pancake reeking of seafood. Wiped on oil turned out not to be enough to produce that familiar crisp, greasy, brown texture. I opened the freezer to see if I had any backups, then turned to the kids with a bright smile – “who wants chicken fingers?” The three of them looked at me blankly, mouths full, chewing away. Shocked, I sat down and dubiously dug in. It was much much better than it looked or smelled. Two of the kids had seconds and no one complained. I probably won’t be able to bring myself to try this again, but the chickpea flour was intriguing.

I put in chinese garlic chives, green onions, shrimp, squid and some red pepper flakes for heat. Soooooooo yummy. Condiments on the side were hoisin, siracha sauces and cilantro. Think I might have them for dinner tonight too~
