Hi Diane:Thanks to you this is my go to banana bread recipe. I made it last night as muffins, baked for 20 minutes with 2/3 of the brown sugar, no turbinado sugar and without walnuts or the banana on top. I also used white whole wheat flour. I made 18 delicious muffins that were plenty sweet.

Absolutely delicious!! I made this recipe yesterday but was pressed for time so I decided to make mini muffins instead which yielded 36 muffins. I sprinkled some sugar on the tops and they cooked up in only 12 – 15 minutes which was great.

Hi, I also have cook’s illustrated, and love it. Did this recipe yesterday and today, and I HIGHLY recomend adding the 6th banana to the top, it becomes concentrated, candied, and beautiful !!!!

This banana bread is the best!! I don’t usually follow the Cooks illustrated recipes as they’re so complicated, but this is worth the effort!
