Our boys have state-wide standardized tests this week and next, so I was looking for a good, healthy breakfast choice for them and came across this smoothie recipe. In the past, our boys have traditionally rejected my smoothies (crazy, I know), but they have since had a smoothie from Jamba Juice that they liked, so I figured I’d give this recipe a try. I made myself one yesterday as a test. I actually forgot to add the honey, and although I found the smoothie to be a bit tart, I thought it was delicious! You’d never guess that it has tofu in it. You can’t taste it, and the consistency is very smooth – like a milkshake. I made another one just a little while ago and this time I added the honey. It was unbelievable. I think this is going to be one of my go-to breakfast recipes. It’s light, yet quite filling.
I’m going to make a batch tomorrow morning before school. Keep your fingers crossed that the boys like them.
Strawberry-Orange-Vanilla Breakfast Smoothie

10 frozen strawberries
About 1/4 lb. plain silken tofu
1/3 cup orange juice
2 Tbs. honey; more to taste
1/2 tsp. pure vanilla extractAdd all of the ingredients to a blender, and blend until smooth.
Yield: one smoothie
