Tiny Pancakes by Mark Bittman

I made the pea/shallot/mint version and they were delicious for lunch. You don’t need much olive oil in the pan at all. Just a thin, thin coat so the pancakes don’t stick. I plan to try more combinations in the future. You can’t beat the ease of making the batter. It’s ready in a flash.

 

Hummus with Mellow Garlic and Cumin

I think this is the best hummus I have ever made. Absolutely delicious. If you’re not making it for a big group, you can cut the recipe in half. Make it the day before you need it and let it come to room temperature before serving.


Parmigiano-Pistachio Frico

Great hors d’oevre for a dinner party. Can be made earlier in the day on the night of the party. Very quick to make. Delicious if you’re a cheese fan.

 

Old-Fashioned Banana Cake

The most delicious banana cake I have ever made.  Incredibly moist, and the frosting is wonderful.   Make the cake the day before, and when it’s cool, wrap it in plastic until you’re ready to frost it the next day.  Wish I had taken a picture of this one.   Decorated it with walnut halves.  It was really nice looking.

 

Leek Potato Soup

When seasoned correctly with salt and pepper, this soup is delicious. I bought a one-pound bag of frozen leeks from Trader Joe’s. They worked perfectly and there was no need to clean the dirt out of them as I always have to do with fresh leeks.
