I can’t tell you how many recipes I’ve tried that we just don’t like for one reason or another.  Here they are:

Vegan “Chorizo” Tacos by Mark Bittman  (click link for the recipe)

These were just OK.  Nothing to write home about.  I did love the idea that they were vegan (so did my vegetarian son – although he wouldn’t try them.  He was just happy that we weren’t eating meat.)  I used chipotle chili powder because it was the only chili powder I had on hand.  It gave the tofu a nice kick (my husband said they burned with flames of fire, and he likes spicy food.)   My husband didn’t love the corn tortillas.  He said he’d prefer flour tortillas.   He also said that once was enough for this meal.  He didn’t have any desire to have them again.  Two of these filled me up.  I actually liked the first couple of bites of the first taco, but by the time I was finishing the second, I had had enough.  They weren’t so good anymore.

Just ok.  Nothing to write home about.

 

Spinach and Ricotta Frittata

I found this recipe in the Nov. ’14 issue of EveryDay by Rachael Ray.   The ingredients looked great, as did the photos, but when I made it, the whole thing was just meh.  I like fittatas too.
