Chocolate Overnight Oats

Every now and then we watch a show called Shark Tank and wonder why we haven’t come up with some of the ideas that we see on TV. Some seem so practical, yet so simple. One of the shows we saw a couple of years ago featured a product called Mush, which is overnight oats with no sugar added. It’s sweetened by dates. A few weeks ago, I saw it sold in Costco, so I bought a box. The flavor was vanilla almond and it was delicious. For me it was a perfect afternoon or after dinner snack.

I recently found a copycat Mush recipe online. I tried it LOVED it! It’s simple to make and it has a very short list of ingredients. It’s also a healthy snack. I could eat this every day.

One of our sons is attempting to break the Guiness Book of World Records 24-hour chin-up record. He has been training for quite some time now. He’s going to attempt to complete more than 5,340 chin-ups (from a straight arm hanging position) in 24 hours. He’s doing it to support Parkinson’s research. Chocolate Overnight Oats

1 tbsp date paste
2 tbsp cocoa powder
1/2 cup almond milk
1/4 cup rolled old-fashioned oats

Put the date paste and the 1/4 cup almond milk in a well-sealed container (I used a small Mason jar) and shake well until the mixture is combined. If you’re having trouble getting the date paste to blend with the almond milk, put it in the microwave for 15 seconds, and try to shake again. Keep doing this, heating and shaking, until the mixture is fairly smooth. Then add the remaining 1/4 cup of almond milk, cocoa powder and oats. Shake again and put it into the refrigerator overnight. Enjoy the next day.
